  2. Prepare 1 cup maida
  3. Use 2-3 pinch kaloji
  4. Provide 1/4 tsp salt
  5. Provide 2 tsp oil
  6. Use Pinch baking soda
  7. Take as required Water for making dough
  8. Use as required Oil for frying
  9. Get 1 tsp Imli Chutney
  10. Take Hand ful Imli
  11. You need as per taste Salt
  12. Provide 1/4 tsp fennel
  13. Get Pinch red chilli powder
  14. Use For Stuffing
  15. Take 3 boiled potato
  16. Prepare 1 cup Boiled kabuli chana
  17. Get 1 cup Boiled mtar
  18. Prepare Food Colours (optional)
  19. Provide 2 Tbsp Moong Sprouts (optional)
  20. Take 1 Onion
  21. Get 1 Tomatoes
  22. Use as required Sev Mixture
  23. Prepare as required Curd
  24. Prepare 1 tsp Jeera powder
  25. Use 1 tsp Green Chutney
  26. Prepare Hand full coriander leaves
  27. Use as per taste Green chilli
  28. Get as per taste Salt

Steps to make Katori Chat:
  1. Let's start with katori. In big bowl add maida, salt, soda, kalonji, oil. Mix properly. Add water & Make dough same as chapati. Cover it & Keep it aside for 15min.
  2. By the time maida dough is taking rest we will prepare chutney.
  3. Let's make green chutney. In jar add coriander leaves, chilli, salt and grind. At the end add lime juice. Green teekha chutney is ready.
  4. Let's make imli chutney. Soak imli in water for some time, when it becomes soft. Then mash and take imli pulp out & add salt, red chilli powder.
  5. Heat Tadka pan with 1spoon oil add sonf in that and give tadka in imli chutney. Imli chutney is ready.
  6. Boil the potato. Cut into small pcs. Divide into 2-3 parts (depending upon how many food colour is available) this colour potato is optional part. It's just to make more colourful chat.
  7. In pan add 1tsp oil, heat and add lil colour and salt & add one set of potato, give good mix. (Follow this steps for rest of the colours available)
  8. Boil chana & matar by adding salt. Attaching pic for reference
  9. Now our maida is ready. Take small pc from maida dough. Make a ball & roll same as chapati.
  10. With the help of fork make small holes. Please see pic. (I am attaching pic of chapati for sample)
  11. Take bowl, outer side grease with oil. And wrap the dough around the bowl.
  12. In pan add oil for deep frying. Heat oil & one oil is ready add one katori in oil.
  13. Splash oil till the katori separates from the dough.
  14. Carefully take out the steel katori from pan. And fry maida katori till it turns golden and crisp.
  15. Basic setup is done.. Let's do decoration and stuffing.
  16. Place maida katori in plate.. Add boiled chana, matar, coloured potato, green chutney, imli chutney, chopped onions, chopped tomato, if you like add curd also, and sev mixture.
  17. Sprinkle pinch of salt, red chilli powder, jeera powder. Your chat is ready.. Enjoy 😊
