The ingredients needed to make Eba, Okro Soup & Stew:
- Use Okro Soup
- Provide 1 Cup Grated Okro
- Use 11/4 Cup Water
- Provide 1 Teaspoon Locust Bean
- Use Potash (less than 1 gram)

- Prepare Pinch Salt
- Take Stew
- Take 3 1/2 Cups Pepper & Tomato mix (Boiled down)
- Prepare 1 Cup Vegetable oil
- Prepare 1 Knor Seasoning Cube
- Get to taste Salt
- Provide 10 Pieces Fried Beef
- Get 8 Medium Size Ponmo (Cooked)
- Use 11/2 Cup Beef Stock
- Use Eba
- You need 2 Cups Water
- You need 1 Cup Garri
Instructions to make Eba, Okro Soup & Stew:
- To make Eba: Bring the water to a boil. Transfer to a bowl. Sprinkle the garri all over the water. Save a little for the final part. Drain the top water. Then sprinkle the remaining garri on top.
- Use a spoon or wooden spatula to mix thoroughly. Shape as desired
- Okro Soup: Wash the Okro thoroughly. Grate the Okro (you could use a knife as well), set aside. Add the locust beans to the water. Transfer to a pot and cook for about 3-4 minutes. Add grated Okro and little potash (the potash is meant to help the Okro retain its green colour)
- Stir and allow to cook for about 2 minutes (do not over cook, Okro is also a vegetable). Add seasoning and a pinch of salt. Stir and take off the heat.
- To make stew: Heat up the vegetable oil or preferably the oil used in frying the beef. Add the pepper & tomato mix. Cover and allow to cook and fry at the same time until it separates from the oil (stir occasionally so it doesn't burn). Add cooked ponmo and stir.
- Add stock, seasoning cube and salt to taste. Cover and allow to simmer for about 5 minutes. Add the fried beef. Steam for a minute and take off the heat.
- Note: The pepper and tomato mix is a blend of tomatoes, onion, red bell peppers and scotch bonnet pepper that was boiled down to remove the water and achieve a thick paste.
