- Take 1 cup mashed & boiled potatoes
- Prepare 1 cup grated paneer
- You need 1 tablespoon finely chopped ginger

- Take 2 tablespoons cornflour
- Use 1/2 teaspoon salt

- Take For Gravy:-
- You need 3 tbsp oil
- You need 1 bay leaf
- Use 1 inch cinnamon stick
- Provide 4 whole green cardamoms
- Prepare 3 cloves
- Prepare 1 green chili chopped
- Use 1 large chopped onion
- Prepare 2 large tomatoes chopped
- You need 12 cashews
- You need 1 tsp cumin seeds
- Get 2 tbsp butter
- Use 2 teaspoons coriander powder
- Provide 1/4 teaspoon red chili powder
- Use 1/2 teaspoon salt or to taste
- Take 1 tsp garam masala
- You need 3 tbsp Fresh Cream

Steps to make Malai kofta:
- For kofta :- In a large bowl, now add all ingredients for kofta- boiled and mashed potatoes, grated paneer, finely chopped ginger, cilantro, green chili, cornflour,salt.
- Mix everything together with your hands to form a dough. - Start making koftas from the dough. Take some part of the dough and roll between your palms to make it round.
- Similarly makes all the koftas. Heat enough oil to fry in a kadai on medium-high heat. Make sure oil is hot,drop kofta in a hot oil.
- Fry until golden brown from both sides. Remove the fried koftas on a paper towel.
- For gravy;- Heat a pot/pan on medium heat. Once hot, add oil and butter then add the bay leaf, cinnamon, green cardamom, cloves and jeera.
- Let the spices sizzle for few seconds and then add the chopped garlic, ginger, green chili and onion.Saute for around 2 minutes, do not brown the onion.Then add the tomatoes along with cashews. Add 2 cups water and stir.
- Cover the pot with a lid and cook for around 10 to 12 minutes until tomatoes soften.Let it cool down down a bit. Blend to a smooth paste.
- Put the same pan on medium heat again. Once hot, add 2 tablespoons unsalted butter and 1 teaspoon oil. Let the butter melt. Add in the pureed gravy and cook for 2 minutes.Then add the coriander powder,red chili powder, salt, and garam masala.Let the curry cook for 2 to 3 minutes. Add fresh cream into gravy.
- Cook for 2 to 3 minutes on medium-low heat.The gravy is now done.
- To serve place koftas on plate and top with the gravy. Garnish with cream and cilantro. Now Malai Kofta is ready to serve. Serve malai kofta with butter naan, rumali roti. ENJOY!
