The ingredients needed to cook Simple Egg Paratha:
  1. Get 5 eggs
  2. Get Oil as per required to make egg parathas
  3. Use For parathas ingredients:-
  4. Provide 1 Cup maida
  5. Use 2 pinch Salt or as per taste
  6. Prepare 1/4 tsp oil to knead
  7. Provide Warm water as per required to form dough
  8. You need few drops of oil to brush evenly on poli
  9. Get For Vegetables mixture ingredients:-
  10. Get 1/4 cup cabbage chopped finely
  11. Use 1/4 cup carrot grated
  12. Take 1/8 cup coriander leaves chopped finely
  13. Prepare Half small onion chopped finely
  14. Get 1 Tbsp leaves of springonion chopped finely
  15. Take 1 Tbsp or 1 green chilli chopped finely
  16. Get For Spices:-(add 1 or 2 pinch of each spice powder to one egg mixture)
  17. Take 1 tsp turmeric powder
  18. Get 1 tsp black pepper powder
  19. Prepare 1 tsp Salt
Steps to make Simple Egg Paratha:
  1. In a large bowl, add flour, 2 pinch of salt, 1/4 tsp oil, lukewarm water as needed to knead a dough. Make smooth, soft dough. smear few drops of oil on dough and spread it all over. Cover dough and set aside for 20 mins. - Meanwhile prepare Vegetables mixture.:- - Finely chopped onion, leaves of springonion, cabbage, green chillies, coriander leaves. Add this all vegetables along with grated carrot in a bowl and mix well.
  2. After 20 mins knead dough again to make it smooth but not too soft or too hard. Divide into 5 equal sized flatten ball. Now take a ball and sprinkle some dry flour on rolling surface and ball. Make a thin poli/ chapatti with the help of a rolling pin. - Apply oil all over chapatti with brush or hand. - Fold it and apply oil on folded portion. Fold it again and roll it into triangle.
  3. Heat a Tawa and place paratha on it. After some second you see bubbles. Then flip it. Roast paratha on both sides until brown spots appear. Don't apply oil or ghee on parathas. Transfer paratha on plate. Do similar process for all remaining parathas. Also, keep egg mixture ready. - Break an egg in a small bowl. Add 2 Tbsp vegetables mixture and 1 or 2 pinch of salt, turmeric powder, black pepper each. - Mix well the egg mixture with fork.
  4. Heat gas on medium flame and add 1 or 1/2 Tbsp Oil in Tawa. When oil is hot pour egg mixture. When egg is almost cook but slightly gooey, press paratha over it so as to paratha stick well with the egg. Press paratha gently. - Flip it. Cook on another side for 2 mins as to ensure that egg is cooked completely on edges. In this process egg paratha also get well coated with oil. Cook both side on medium flame. - Do the remainings paratha in similar ways.
  5. Serve Egg Parathas hot with chutneys or you can even eat it plain without any chutneys.
