  1. Take 3/4 cup whole wheat flour
  2. Prepare To taste salt
  3. Prepare 1 tbsp oil
  4. Provide 2 eggs
  5. Use 1 onion finely chopped
  6. Provide 1/2 tomato finely chopped
  7. Get 1-2 green chillies finely chopped
  8. Provide 1 pinch turmeric powder
  9. Use 1/4 tsp red chilli powder
  10. You need 1 tbsp finely chopped coriander leaves
Steps to make Egg Paratha:
  1. Ina mixing bowl take the whole wheat flour. Add few drops of oil and salt to taste. Mix well and knead to a smooth dough by adding water as needed. Cover and keep aside for 20-30 minutes.
  2. Meanwhile, break the eggs in a deep bowl. Add in onions, tomatoes, green chillies, coriander leaves, turmeric powder, chilli powder and salt. Beat well until frothy by using a fork or spoon. Keep it aside.
  3. Divide the dough into 2 equal portions. Roll each portion of the dough into a chapati of 6 inch diameter using a little wheat flour.
  4. Heat a nonstick tawa (griddle) on a medium flame and cook the chapati using 1/2 tsp oil till it turns light brown from both sides. This has to be half cooked at this stage and not completely done.
  5. Now reduce the flame to low. Pour half of the egg mixture over the chapati and spread it evenly. Cook for 1-2 minutes. Add little oil on the sides.
  6. Then fold two sides of the chapati as shown in the picture. Again fold other two sides to form a book fold.
  7. Flip it on the other side and cook for another 1-2 minutes or till done by applying few drops of oil.
  8. Follow the process for the 2nd paratha likewise.
  9. Cut the paratha into half using a sharp knife and serve hot with pudina chutney or curd.
