The ingredients needed to prepare Egg Paratha:
- Get 3/4 cup whole wheat flour
- Get To taste salt
- Take 1 tbsp oil
- Provide 2 eggs
- You need 1 onion finely chopped
- Use 1/2 tomato finely chopped
- Get 1-2 green chillies finely chopped
- Take 1 pinch turmeric powder
- Provide 1/4 tsp red chilli powder
- Take 1 tbsp finely chopped coriander leaves
Steps to make Egg Paratha:
- Ina mixing bowl take the whole wheat flour. Add few drops of oil and salt to taste. Mix well and knead to a smooth dough by adding water as needed. Cover and keep aside for 20-30 minutes.
- Meanwhile, break the eggs in a deep bowl. Add in onions, tomatoes, green chillies, coriander leaves, turmeric powder, chilli powder and salt. Beat well until frothy by using a fork or spoon. Keep it aside.
- Divide the dough into 2 equal portions. Roll each portion of the dough into a chapati of 6 inch diameter using a little wheat flour.
- Heat a nonstick tawa (griddle) on a medium flame and cook the chapati using 1/2 tsp oil till it turns light brown from both sides. This has to be half cooked at this stage and not completely done.
- Now reduce the flame to low. Pour half of the egg mixture over the chapati and spread it evenly. Cook for 1-2 minutes. Add little oil on the sides.
- Then fold two sides of the chapati as shown in the picture. Again fold other two sides to form a book fold.
- Flip it on the other side and cook for another 1-2 minutes or till done by applying few drops of oil.
- Follow the process for the 2nd paratha likewise.
- Cut the paratha into half using a sharp knife and serve hot with pudina chutney or curd.
