  6. Prepare 2 tbsp ghee
  7. Get 1 bayleaf
  8. Get 1 " stick cinnamon
  9. Use 3 pods green cardamom

  11. Take 1/2 tsp fennel/ sauf seeds
  12. Prepare 1 tsp jeera
  13. Prepare 1 onion, finely chopped
  14. Prepare 1/4 cup curds
  15. Get 200 gms paneer cubes, browned in 1 tsp ghee
  16. Prepare 1 tsp ginger - garlic paste
  17. Take 2 green chillies, slit
  18. You need 1/4 tsp Turmeric powder (haldi)

  20. Take 1/2 tsp Kashmiri red chilli powder

  24. You need 2 tbsp coriander, finely chopped

  1. For cooking the Brown Rice - - Heat 5 cups of water in a vessel, once the water comes to boil, add the salt, oil and soaked brown rice and cook them on medium flame till 90% cooked for 10-12 minutes. - - Remove the cooked rice from water and keep aside.Tip : Make sure you do not overcook the rice
  2. How to proceed - Heat ghee in a non stick pan and add the whole spices, saute for 2 minutes on medium flame
  3. Add the chopped onions, ginger-garlic paste, green chillies & saute till they onions turn translucent.
  4. Add the chopped tomato & saute till the tomatoes turns soft & mushy - Add the turmeric powder, chilli powder, biryani masala and salt. Mix well and cook on slow flame for 2 minutes.
  5. Add 1/4 cup water & let the spices cook. - Add whisked curds and saute till the curds combines well in the mixture.
  6. Add mint leaves, coriander leaves, browned paneer and mix well.
  7. Spread the cooked rice evenly on top of the gravy, cover & let it simmer for 5 minutes on slow flame so that the ricr will soak in all the flavours. - - Serve hot with mixed vegetable raita.
