  1. Sufaid Channy(choolay) ko achi tarha wash kar ky bhigo dain overnight or minimum 6 hrs.jab choolay bheeg kar achi tarha phool jain tu 4 glass pani ubalain.aur bheegy cholay pani sameet ubal lain I hv not used soda to soften cholay if u like u cn add.
  2. Karhai main oil garam krain,chop piyaz add kar ky soft pink krlain.
  3. Piyaz gullabi ho jye tu zeera,dhania, kaloonji,raidana,meethidana,saunf, ajwain add krain.low flame py fry krain phir chop timatar add kar dain. Aur timatar soft hony tak bhoon lain.
  4. Masaly add kar ky bhoonlain.jab oil uper ajy tu chop aloo add krdain. 2 minute masaly main bhoon kar cover kar ky aloo galny dain.zaroorat hu tu 1/2 cup pani add krain.aloo apny pani main soft hojyaingy.
  5. Boil choolon ko masher ki help sy thora sa mash krlain.choolon ka pani bilkul dry nahi karna,jo thora pani choolon ky sath ho usy rehny dain.imli ko soak krny ky baad seeds alag krlain aur pani/pulp/goda alag. Aloo ky masaly main chooly add krdain.mix krain.
  6. Imli ka pani/pulp add krdain.Cover kar ky medium flame py 5-7 min cook krain taky choolay aur masala achi tarha mix houn.
  7. Jab choolay achi tarha masaly main ghul mil jain tu currypata,chaat masala,fresh harimirch add krdain. Flame off krdain.
