- Prepare 4 tbsp besan
- Take 5 tbsp oil
- Get 1 glass water
- Use 1 big potato cut in half inches
- Get 1 tomato
- Use 5-6 bhindis slit and fried
- Take 3-4 green chillies slit
- Provide 8-10 Cluster beans cut
- Use 2 tomatoes chopped
- Get as needed Cauliflower florets fried
- Use 1 drumstick cut in pieces
- Use 2 kokams(brown)
- Use 2 tbsp tamarind soaked in one cup water (tamarind pulp)
- Use to taste Salt
- Get 1 tsp Red chilli powder
- Get 1/2 tsp Turmeric powder
- Provide 1/2 tsp methi seeds
- Prepare 1 tsp jeera
- You need 1 pinch hing
Instructions to make Sindhi curry:
- In a deep pan add oil.
- When oil heats add Jeera,methi seeds,and hing. Let them crackle.
- Now add besan and start roasting on slow flame.
- Roast for roughly 6 to 7 mins till aroma releases and besan turns golden brown.
- Now add water.
- Then add salt to taste, turmeric powder and red chilli powder.
- Let it boil.
- Then add vegetable one by one.
- Add potatoes,drumsticks, cluster beans first as they are hard and will take time to cook.
- When these veggies are half cooked add kokam,bhindi, cauliflower fried and tomatoes
- Let them boil on simmer for 10 mins till all veggies are cooked
- Now add tamarind pulp.
- Cook for more 5 mins.
- Serve hot with rice
