- Get 1/2 cup coriander leaves

- Use 1/2 cup Curd
- Get 1 tbsp Coriander powder
- Get to taste Salt
- Get 1/2 tsp sugar
- Provide 1/2 cup Water
- Prepare For red layer
- Take 1/2 cup Beetroot juice
- Get For Mutton keema.
- Provide 300 gm Mutton keema
- Provide 1 Onion (big)
- Provide 1 tsp ginger garlic paste
- Get 1 tsp Turmeric powder
- Prepare 1 tsp Red chilli powder
- Get 1 tsp Kashmiri red chilli powder
- Take 1 tsp Cumin powder
- Get 1 tsp Coriander powder
- Get 1 tsp Garam masala powder
- You need 1/2 cup Fresh malai cashew nuts paste
- Take 1 handful coriander leaves
- Prepare For vegetable layer
- You need 1 cup peas
- Take 2 Carrot
- Get 1/2 cup beans
- Use 1/2 cup cauliflower
- Provide 100 gm Paneer
- Prepare Spices for vegetable layer
- Provide 4 Dry red chilli
- Provide 1/2 Inch cinnamon stick
- Take 1 chopped onion
- Get 7 garlic cloves
- Take 1 Star anise
- Use 1 black cardamom
- Provide 1 green cardamom
- Prepare 1/2 tsp ginger paste
- Prepare 1 Chopped tomato

- You need 1 cup ghee
- Provide 1 cup cashew nuts and raisin
Steps to make Layered Biryani:
- Wash the rice properly & boil it with green cardamom, star anise,salt, cinnamon stick & cloves
- Check the rice, if there is no water & boiled properly then add ghee to it & switch off the flame.
- Make green chutney with all chutney ingredients.
- Divide the rice in three bowls because we need 3 colour of rice.One is white & the other 2 are green chutney mixed rice & beetroot juice mixed rice.
- Heat ghee & fry raisin & cashew nuts for few mins & then take out.
- Fry paneer cubes for few mins.
- Make a paste of dry red chilli, star anise, garlic,black & green cardamom for vegetable layer.
- Heat oil & saute chopped onion, tomato & ginger garlic paste for few minutes.
- Add red paste & all vegetables.
- Add paneer.
- Add all spices & some hot water.Let it boil for sometime.
- After 10 mins check the gravy & switch off the flame.Don't make much gravy.
- For mutton keema heat ghee, add chopped onion,tomato & ginger garlic paste & saute it for a few mins.
- Add mutton keema & all spices.Stir it constantly.
- After 10 to 15 mins add hot water, cover it & let it cook.
- After 15 mins check it.If it is boiled properly then add malai_cashew paste.
- Add coriander leaves & switch off the flame.
- Now assembling time.Take a big vessel.Put one layer white rice & then put fried raisin & cashew nuts on it.
- Now place green rice on it & then place thick mutton keema.
- Mutton keema layer.
- Put beetroot rice on it.
- Place vegetable mixture over it.
- Spread some ghee over it & cover it with white rice layer.
- Cover the vessel & cook it in low flame for 5 minutes.
- Make it cool for few mins & then take a plate & flip the vessel on it.You can see all the beautiful layers of this biryani.
